BAKED CHEESECAKE WITH FRESH MANGO


All-time favourite and decadent desserts by food lovers. Method is easy but cooling and cooking time is more and eating is pure bliss.

**Normally it’s baked in oven, but I am going to tell you how to prepare it in microwave.

Do look for some notes ******at the end

For Crust

Biscuit                        -170 grams

Unsalted Butter        - 90 grams

Pulse biscuits and butter in food processor, it will comes out like a crumble/will look like wet sand and hold it together in clump when you press it in your fist.  Pour this mix in tin container for baking (
springform container or container which is cut like plate from centre so that while taking out at last phase just lift from below the container and sides will not disturb at all ) and press it firmly and even it using spoon and leave it in the fridge for 40 minutes.

For Filling

Cream cheese           300 grams

Egg -                             1

Castor sugar             80 grams

Vanilla / any essence 2tsp

Lemon juice 2 tsp

Beat cream cheese using hand blender till it becomes light and fluffy. Add eggs one by one and keep beating, add essence and lemon juice and beat it for a while. Take out crust from the fridge. Pour cream mixture over the crust.
Pre-heat the microwave at 180 degrees.
Bake the mixture (cream mixture with crust) in the microwave using convection mode at 180 degrees Celsius for 50-60 minutes.

Bake till its firm to touch. The cake should wiggle slightly in the centre and should be firm around the edge. The centre will firm up as the cake cools down. A few toasty golden spots are fine. Let this be in the microwave or oven for half an hour. Take it out and let this be at room temperature for a while. Add topping and keep it in the fridge overnight. This makes cutting of pieces easy.


Topping
Here I used simple FRESH mango pulp as topping.
Important suggestions

·         If you want thick crust take 200gms biscuits

·         You can take any biscuit, if its sugar free then you have to add 40 gm sugar. I have used ‘Nice’ Brand sugar biscuits, no sugar added.

·         You can use unsalted butter also.

·         Here I have used Delecta Brand cream cheese. Look for any brand available.

·         For topping you can also use fresh pulp or any tinned pulp or fruit of your choice.
