KADHAI PANEER WITH FRESH SPICES

Another weekend approaching and those who love food but hate cooking must try this most promising dish ordered and liked by most. You are going to love it .And due to lockdown, home cooking is priority so I try to make this at home. It’s not going to take much time either.
Serve 4-5 persons       
You Need

Paneer                                      400 Grams
Onion chopped                        1 big or two small
Onion                                       1 small
Tomato                                     1 small
Fresh Spices                            Cumin seed 1tsp/ Dry red chilli 2/ Black Peppercorns 5-6
Capsicum                                 1 small (else use half)
Tomatoes purée                       4 medium size
Garlic                                       8-10 pods
Ginger Paste                           1tsp purée it firmly
Coriander seed                       1tsp
Salt                                          according to taste
Kasturi Methi                           1 tsp powdered
Haldi Powder                          ¼ tsp or a  pinch
Deeghi mirch                          1 1/2 tsp  (for colour ) used MDH brand
STEP 1– Dry roast two red chillies, cumin seed 1 tsp, black peppercorns 5-6 , roast a little and grind . ( image attached)
STEP 2 - cut small onion into four half and remove each layer and cut capsicum in squares removing seeds part, one tomato in square removing seed part like in picture.(image attached)
STEP 3 -Mix Paneer cut in cubes, add grind roasted masala, Kasturi Methi and keep aside while you make curry.( image attached)
STEP 4 : take pan add oil 4tsp ( or alternatively desi ghee but it’s optional), heat and add Dhania seeds ( coriander seeds) 1 tsp add ginger garlic paste and roast but not to get burnt texture, now add chopped onion and stir till translucent add tomatoe purée. Add deeghi mirch, haldi and salt according to taste. Keep stirring add 5 tsps milk ( or cream)and don’t stop stirring add little water , let this boil.

STEP 5: add step 3 paneer mix and boil.( image attached). 

STEP 6: Dish’s crunchy part is still left as this is the last step and to be added when you are about to serve . Take pan add little oil put our step 2 veggie all together with dash of little salt and just stir for two minutes and add this mix to your prepared curry with Paneer.

***After adding these crunchy veggie not to cover , as capsicum loose its colour and crunch .
